Yugioh if i attack with Obelisk and my opponent activates Scrap-Iron Scarecrow, will that stop my attack?

No, that doesn't stop the attack because obelisk can't be targeted by traps, spells, and effects. If the scrap iron scarecrow targeted all your monsters that attacked that turn then techniquelly your attack is canceled, but that is not it how it is.
